You can't rename an email address. The only way to accomplish this would be to create a new email address. You can then either keep both, or delete the old one. But you will need to download ALL emails from the old one first, otherwise those emails WILL BE DELETED.

Setup your new email address as per these instructions: How do I add a new email address?

If, however, you want all emails from the old address to goto the new address, then you can setup an email forwarder from the old address to the new address.
